Poor Man’s Lentil Soup

I remember this soup from when we were desperately poor.  I had to only get a haircut every two months, we couldn’t afford anything more frequent.  This soup had very cheap ingredients but was always delicious.  After more three decades I made it again.  It’s still tasty.  So I’m handing it on.

Poor Man’s Lentil Soup

This may seem a strange recipe. My wife cut it from a magazine when Meghan was very young and we were very poor. It is surprising just how good it tastes and how cheap it is to make. Using a crockpot to cook it makes it extremely easy to prepare. I don't know whether any of my girls remember eating this.

Ingredients

  • 1 Large Onion (Coarsely chopped)
  • 6 Medium carrots (Peeled and sliced)
  • 1 bag lentils
  • 2 quarts water
  • 8 Hotdogs (chopped into 1/2 inch rounds)
  • 4 cubes Chicken Bulion

Directions

Step 1
Rinse and drain lentils
Step 2
Prepare all ingredients
Step 3
Combine all ingredients in crock pot and cook on low for 4 to 6 hours.
