Homemade Custard Recipe

I am writing this at Steven minus 30.  What?  Well I’m 30 pounds lighter than when I started the Dukan diet 2 months ago; so Steven minus 30.  Cata and I have been able to eat as much of this custard as we have wanted without ever violating the diet.  That is true even on the days of only meat a dairy.  I’ll explain the diet later, in another post.  This is a simple, but tasty, recipe.  It would be easy to modify however you want.  I did try a chocolate version, that needed a little more sweetener than I put in.  Let me know if you make it.  Enjoy!

This is a very yummy custard that is relatively easy to make. It really just a whisk together and bake. It is very low calorie and almost no fat. There is no fat except for the one egg. You could get rid of that by upping the egg beaters to a full cup and removing the egg. Do NOT boil the evaporated milk.

Ingredients

  • 2 cans Non-fat Evaporated Milk (Shake well)
  • 3/4 cups Egg-Beaters
  • 1 Egg
  • 1/4 cup Splenda Brown Sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1 teaspoon Vanilla or Rum extract

Directions

Preparation
Step 1
Start boiling a quart of water
Step 2
Start heating evaporated milk in a 1 or 2 qt pan
Step 3
Preheat oven to 350
Step 4
Spray a 1 1/2 quart baking/casserole dish with pam and place it in a 9 x 13 baking dish (this will form a bath in which the custard will cook)
Cooking
Step 5
Whisk together all the ingredients except the milk in a mixing bowl
Step 6
When the evaporated milk is steaming, nearly boiling, pour it into the egg mixture whisking the egg mixture very fast.
Step 7
Pour all the ingredients from the mixing bowl into the 1 1/2 quart baking dish.
Step 8
Pour the boiling water outside of the 1 1/2 quart baking dish into the 9 x 13 pan, creating a 1- 2 inch deep bath around the 1 1/2 quart baking dish

Step 9
Bake in oven for 35 minutes
Step 10
Remove custard from bath and allow to cool. Then cover the custard with plastic wrap and chill in refrigerator

Eat all you want... you can make more
